Natamycin is a polyene macrolide antifungal agent that can effectively inhibit the growth of fungi such as molds and yeasts and reduce the production of mycotoxins. In June 1982, the U.S. Food and Drug Administration (FDA) officially approved natamycin as a GRAS product and it can be used as a food preservative. In March 1997, the Chinese Ministry of Health officially approved natamycin as a food preservative, mainly used for surface mildew prevention of food.
